Pita Melt filled with Chicken, Avocado & Cheddar. Served with a classic Greek Salad.

This great quick lunch idea is so tasty! And with the health benefits of avocado now well known, is good for you too. Paired with a simple Greek salad recipe, this dish can be whipped up in no time!
- Yields: 4
1 Genhaven Foods Battered Goujons 360g pack.
For Greek Salad
1Heat your oven as per the instructions on the Glenhaven pack, remembering that ovens may vary slightly.
2Place your Glenhaven Chicken Goujons into the oven and bake as per the pack instructions. Once cooked let cool for 10 minutes and then cut each goujon in half lengthwise.
3Brush one side of each pita bread with oil and place on a baking sheet. Bake for 2 minutes or until slightly crisp.
4In a bowl, mash the avocado with the lemon juice, salt and mayonnaise. Spread the mixture inside the pitas. Top the avocado mixture with the sliced chicken and a sprinkling of grated cheese.
5Place back into the oven for 5 minutes or until the cheese is melted.
6For the Greek salad, place all the ingredients in a bowl and mix so the oil coats the other ingredients. Season with salt and pepper, to taste.
