Mexican Style Chicken Enchiladas with Creamy Guacamole.

Enjoy this satisfying chicken enchilada recipe with an easy avocado dip! A nutritious and easy family dinner idea made all the easier by using our delicious Glenhaven breaded chicken goujons!

1Heat your oven as per the instructions on the Glenhaven pack, remembering that ovens may vary slightly.
2Place your Glenhaven Chicken Goujons into the oven and bake as per the pack instructions. Once cooked let cool for 10 minutes and then cut the chicken into cubes.
3Add the oil to a medium pan, over a medium heat and sauté the onions for 2-3 minutes until soft.
4Turn down the heat and add the sour cream, cheese, oregano and pepper to the pan and heat until the cheese melts. Stir in salt, passata, chilli powder, green pepper and garlic. Stir in the cubed chicken goujons.
5Place the 8 wraps on a countertop and divide the mixture between them, placing it down the middle of each wrap. Roll up the wraps and arrange them side by side in a baking dish.
6Cover with salsa sauce and 100g cheese. Bake uncovered in the preheated oven for 15 minutes.
7For the Guacamole, peel and dice the avocados and mash them into a paste in a bowl. Add the coriander paste, tomatoes and chilli powder, and salt if desired. Mix through the sour cream which gives the creaminess! Place in a serving bowl.
8Serve immediately with the guacamole on the side.
