Ciabatta Chicken & Bacon Sandwich with Grilled Onions, Rocket and Mozzarella

A great hunger buster, our Ciabatta sandwich made with Glenhaven Crispy Chicken Steaks ticks all the flavour boxes! Served warm straight from the oven, it’s hard to beat this flavour-filled chicken sandwich!

  • Yields: 2

Ingredients

1 Glenhaven Foods Crispy Chicken Steaks - pack of 2

2 Ciabatta bread rolls

2 slices of your favourite bacon

1 tsp vegetable oil

1 onion, sliced

50 g rocket

50 g grated mozzarella

Directions

1Heat your oven as per the instructions on the Glenhaven pack, remembering that ovens may vary slightly.

2Place your Glenhaven Chicken Steaks into the oven and bake as per the pack instructions. Once cooked let cool for 5 minutes.

3Heat the oil in a pan over a medium heat. Fry the bacon until crisp and remove onto a sheet of kitchen paper and set aside. In the same pan so you are retaining all the bacon flavours, fry the sliced onions for about 5 minutes until soft.

4Cut the Ciabattas in half and place the Glenhaven Chicken Steak inside. Top with the bacon, onions, rocket and mozzarella cheese and press down.

5Place back into the oven for 2 minutes until the cheese is melted.

6Serve immediately.
