Homemade Sweetcorn & Popcorn Chicken Pizza

Looking for cool party food or dinner ideas for the kids? This tasty pizza is quick, easy and delicious, ideal if you want recipe for the kids to get stuck into! Our pizza dough recipe is super simple, but you can also buy a ready-made dough in your local retailer.

  • Yields: 4

Ingredients

2 Genhaven Foods Southern Fried Popcorn Chicken 200g pack.

400 g tomato passata

200 g mozzarella cheese

200 g frozen or tinned sweetcorn

For the pizza dough

450 g Strong White Flour

1 tsp sugar

7 g sachet of fast acting yeast

300 ml warm water

1 tbsp olive oil

1 pinch salt

Directions

1For this pizza dough recipe place the flour, sugar, salt and yeast into a large bowl. In a separate jug have the oil and the warm water. Pour into the dry ingredients and mix together well to form a dough.

2If you have an electric mixer with a dough hook use this to knead the dough for about 5 minutes. Otherwise you can knead it by hand for about 10 minutes. When the dough is smooth and springy place it back in the bowl and cover loosely with a tea towel. Leave it in a warm enough place, close to a radiator or near the cooker, to prove until doubled in size which takes about 50 minutes to 1 hour.

3Heat your oven as per the instructions on the Glenhaven pack, remembering that ovens may vary slightly.

4When the dough is ready, divide it into 4 equal parts. Dust your worktop with flour and roll out your dough, to about ¼ inch thick, forming a round pizza shape.

5Pour the passata onto the pizza base, smoothing it out evenly to the edges. Sprinkle each with the sweetcorn, mozzarella and a handful of Glenhaven Poppers Chicken.

6Place on a floured baking sheet and bake in the oven for about 15-20 minutes, until the chicken is cooked through and the pizza base is golden underneath.

7Serve immediately.
