Kid’s Favourite Chicken Nuggets, with Baked Sweet Potato Fries & Roasted Veggie Skewers.

When you need a quick and easy dinner for the kids, then our Glenhaven Chicken Nuggets served with healthy sweet potato chips and delicious veggies is perfect! This is also a great idea for kid’s party food!

  • Yields: 4

Ingredients

1 Genhaven Foods Battered Nuggets 400g pack.

2 large sweet potato per person, washed and cut into skinny French Fries.

1 red pepper, cut into chunks.

1 yellow pepper, cut into chunks.

1 courgette, cut into thick rounds and then halved.

200 g punnet of cherry tomatoes.

2 tbsp olive oil.

1 pinch salt and pepper, if desired

1 pack of skewers

Directions

1Heat your oven as per the instructions on the Glenhaven pack, remembering that ovens may vary slightly.

2In a medium sized bowl, place the olive oil seasoned with a little salt and pepper, to taste.

3Place the Glenhaven Chicken Nuggets on a baking tray. Prepare your chips next.

4Toss the sweet potato fries in the olive oil so they are lightly coated before placing them on a baking tray.

5Cook your nuggets and chips in the oven as per pack instructions, until both are crispy and golden.

6Next thread the tomatoes, peppers and courgette onto skewers and place skewers onto a baking sheet. Brush the vegetables with the remaining olive oil in the bowl.

7Place into oven and roast for about 10 minutes.

8Serve immediately.
