Spiced Chicken, Cucumber & Spinach Salad, with Curry Mayonnaise Dressing

If you like flavours of coronation chicken, you will love this easy chicken salad recipe, mildly spiced with curry and perfectly balanced with fruity mango. Such an easy meal, and delicious to boot!

  • Yields: 4

Ingredients

1 Glenhaven Foods Southern Fried Chicken Steaks - pack of 4

400 g baby spinach, washed

1 cucumber, sliced

2 fresh mangoes, peeled and cubed

100 g toasted pine nuts

For the Dressing

150 g mayonnaise

50 g Greek style natural yoghurt

1 tsp curry powder

Directions

1Heat your oven as per the instructions on the Glenhaven pack, remembering that ovens may vary slightly.

2Place your Glenhaven Chicken Steaks into the oven and bake as per the pack instructions. Once cooked allow to cool for 10 minutes and slice up.

3To make the dressing, place the mayonnaise, yoghurt and curry powder into a bowl and whisk. Set aside until later.

4Divide the spinach between four plates and scatter the cucumber and mango over the lettuce. Place one sliced Glenhaven Chicken steak on the top of each plate of salad and sprinkle each with the toasted pine nuts.

5Serve immediately.
